Strategy for deleting old charts

Eventually workflow-beta1 wont really be useful so we need to come up with a sunsetting strategy for charts.

Perhaps we should just remove all the -beta* charts once we release stable, though this will continue to be an issue once we start releasing 2.x.x charts.
