feat: integrate Weaviate

Feature description

Currently, we only support local, ChromaDB and Qdrant vector stores. We would like to add support for Weaviate.

Motivation

Adding support for Weaviate will make our system more accessible to users who already rely on it, increasing adoption and compatibility with existing workflows.
