ZNC docker fails with "unrecoverable config error"

Opening this as an issue since I don't have time to troubleshoot it at the moment.

Currently the ZNC docker fails with "unrecoverable config error"

I believe this is because we are missing the "docker run -it -v znc-cfg:/znc-data znc --makeconf" step. Potentially znc will need a template.

Does anybody have a copy of the default znc config file they can share so I can fix this? I don't use IRC any longer (Discord killed it!) so my irc knowledge is very rusty and I never used a bouncer so I'd need to do some research to test functionality. Advice on how to use/test znc would be appreciated, especially from users who have it installed!
