Dive into each major "category", where category is a cell type (e.g. Cones) and re-run scVI -> clustering to find celltypes within the major cells types (for example there are ML and S cones) and (potentially) developmental trajectories.

Attempted to use RPCs/progenitors for each terminal type. Was a mess. Will remove and use RPC/progenitor in its own subset.
