Introduction/edits for clarity

This PR is for edits to the introduction chapter. I edited for readability and consistent formatting. In particular, I used asterisks and single spacing for bulleted lists.

Knitting generated new files in the _book folder. I added these items to .gitignore. They're still showing up when I knit, so I'm manually reverting those files before committing to keep them out of main.
