[ENH] Support `TIMESTAMPDIFF`

Is your feature request related to a problem? Please describe. After #813 is resolved, we should also add support for the TIMESTAMPDIFF function, as described here.

Describe the solution you'd like The implementation should look similar to that of TIMESTAMPADD. Previous support was added with #495, which we can grab the pytests from.

Describe alternatives you've considered None.

Additional context I plan to open a PR for this after #813 is merged.
