I need to be able to enable debug in an easier way with Dashmate

Expected Behavior

Some sort of dashmate setup --debug

Current Behavior

We need to go in and manually edit the config.json, this includes several lines that need changing to debug, and me having to consistently check which we're actually enabling (for example, we don't need envoy debug logs)

This is prone to errors
