Updated history stack documentation to reflect changes in paste modes

Updates the history stack documentation to reflect changes in the paste behavior. Previously a "mode" selection was available with one button to apply the changes. The two modes are reflected in individual buttons.

I reordered the sections to keep relevant features grouped together.
