[dagster-airlift] Fixes for demo

Summary & Motivation

The recent changes we made to how proxying behavior works have broken the presence of the Airflow tag on external assets. This adds an "Airlift Mapped" kind tag so that all the mapped assets get a kind tag.

How I Tested These Changes
