Update sources in with_openai

Summary & Motivation

This PR updates and add doc sources in the with_openai example so that we can showcase a more complete example in the blog post.

This PR also fixes the summaries of the sources provided to the model. Long story short, passing a list of summaries caused the model to always answer "I don't know", although it was working just fine before. Passing a string created by joining the summaries fixed the problem.
