Sharp version bump (0.26.3)

It looks like the current version of Sharp breaks the builds when using NPM7. A patch has been released last year to fix it. See here for more details.

This PR bumps Sharp version to 0.26.3.

If this PR gets merged, it would be nice to also update next-optimized-images to be using the latest version of this package.
