[Task] Update config doc for v1beta2 API

Since #710 is completed, the doc/config needs updating for v1beta2.

The changes can be (more will be added if missing):

  • [x] ~Mention the deprecated v1beta1 and removed ClusterCryostat CRD.~
  • [x] Update Data Isolation section to mention authorization check with webhook + defaulter if target namespaces spec is not set.
  • [x] Update all Configuration sections to use v1beta2 as an example.
  • [x] Document default resource requirements for proxy, storage, and database container.
