Adding a collection, a parser, and a scenario for Mealie (https://mealie.io/).

Looks like I'm having trouble getting the date out of the log file correctly. The time gets set to the current time in the dataparse-enrich parser. Not sure how to fix.

It was an issue parsing the year in mealie-logs.yaml. Corrected to parse the correct time from logs and re-ran tests.
