[feature] save log files as json

It would be really nice to be able to select the output format of the logs as JSON. This would make the integration with the prometheus / loki / grafana stack a lot easier.

Being able to push / save the prometheus metrics is great from a monitoring standpoint. However, the logs are harder (since the fields are not mapped) to ingest into Loki.

I'll keep it in mind during the refactoring of the logs. There's a long standing PR on parsing all the logs coming from restic: I'll have to finish it at some point 😢

Spoiler alert: there are a lot of logs to convert 😆

Thanks for the quick reply. I really wish I could help! Unfortunately, I'm more of a python guy and my knowledge of Go is not there yet...
