remove hardcoded ANC reference in dAK processor

Describe the bug there is several places in the code where "ANC" is hardcoded, this will block the dak processor to performing on other smart-guidline

To Reproduce Run dak processor on file having another canonical base, or having column header named like [EmCare] Activity ID

Expected behavior should create profile etc on different smart guidelines

Additional context We are preparing a PR that add regex and/or parsing to avoid the ANC hardcoding
