[Docs] References to EOL SDK versions

There are references to the Node SDK version 3.2 which is EOL (Jan 2024) while the actual ODM is based on Node SDK 4.2x as far as I can tell.

Also, there are some references to Server 6.5 which is also EOL in tutorials. Maybe those should also be updated to the latest version.
