rename ValsetConfirmation to CheckpointConfirmation

Summary

I propose renaming valsetConfirmation to checkpointConfirmation. This is more intuitive to what is happening each time this confirmation is submitted. Along side such a PR we should provide documentation on when these happen until epochs land.
