Simplify installation instructions

Many issues on forum are the result of poor installation instructions. Todo:

• [ ] check for latest software versions and update in instructions
• [ ] refactor docs to be a bit more useful
• [ ] add more examples
• [ ] verify mac / win / linux instructions
• [ ] find all youtube videos and preferably update them
