Add initContainers option

Hi, this is a tweak to expose an initContainers option in values.yaml. I've tested this at home (and you can find a working chart with this change via repository https://alexander-bauer.github.io/coredns-helm at version 1.19.11).

I've made some fixes on this branch, including removing my testing version bumps, and signing off on the commit. Please review when you have a chance.
