Show more relay information

Pull from nostr.watch, nip 66, anything else relevant.

Maybe wait until a relay has been seen a few times, then start pulling stats so we're not trying to gather stats for the entire universe.

Implementation notes:

• Currently welshman provides some stats, but they make the whole library kind of confusing. Refactor that, remove the ConnectionMeta class, and add a way to listen to events on all relay connections.
