email.php doesn't ship default, entrypoint should modify it

We should be shipping a default email.php file and find a nice clean way to edit/replace it. It's ugly tho.

Hi, Do you want help here? Why you ship a email.php file with and not change the default values via sed?

Love some help here - I'm not sure sed would be able to work given the lines that need to be updated are not unique.
