[contracts] Improve `ethService` tests

The ethService tests are incomplete and have weak assertions.

Also, we should verify the dispute methods work with the assumption that transfer.transferState.balance is always the initial balance of the transfer while transfer.balance is the current balance (i.e. has been resolved)
