Opik helm chart small fixes

Details

• In clickhouse-backup-cronjob.yaml add condition for using access_key_id and access_key_secret - when SA is not defined
• serviceAccount name for clickhouse backup should not have hard-coded name
• serviceAccountName in deployment.yaml should be conditional
• Move Minio related envvars to configmap
• Update documentation
