Update packages

There are a lot of packages flagged by Snyk.

Each package should be upgraded and tested individually to ensure no breaking changes or to fix breaking changes where appropriate.

Ideally a great first issue for Hacktoberfest.

Create an issue and ask for it to be assigned to you if you want to upgrade one of the packages.

Note because of how fast things run during Hacktoberfest, any PR's that haven't been commented/committed to in 24 hours will be closed and re-issued.
