Inline mathjax shows weirdly in edit history diff

The edit history for this post shows some "partial" Mathjax at the end of the changed paragraph in the diff:

There have been updates since this was reported on Meta; I just checked the history of that post and it still looks like that.

On the one hand, this is probably a corner case that should be low priority. On the other hand, reviewing Mathjax edits is already hard, and if we can make any of that better, let's. So I'll mark as medium priority for now, pending an assessment of difficulty.
