I have a need to be able to sort my subscriptions into folders, I’d like to be able to have a Sailing folder for all the Sailing channels I follow, same with folders for Off-roading, F1 etc, it would be a great way to go directly to content I want to watch at the time, and I don't have to search through all of my subscriptions trying to remember channel names.

There is already an extension that does exactly this called PocketTube, you may want to check it out. The feature feels out of scope/too big for this project anyway for how much work it would take to implement, presumably.
