Update the resolved message docs for more guidance on the configuring checkpoint options

Fixes DOC-10419

This PR adds more detail to the Resolved message section in the changefeed docs in order to clarify how checkpointing and resolve timestamp emits work. Also, added pros/cons of frequent checkpointing.
