Add chat analytics

Organisers are interested in seeing statistics around chat activity at their conference. For example, we should track things like:

• Messages sent per minute
• Number of DMs
• Number of users active in chat

The data should be visible through the analytics pane of the admin panel.

Note: recording this data may have performance implications.
