test_runner: support module mocking

This commit adds experimental module mocking to the test runner. Fixes: https://github.com/nodejs/node/issues/51164

Platformatic can already generate Prometheus metrics. It would be great to be able to display some of those metrics in Grafana without all of the pain of building the charts.
