Audit-logging would be awesome, to see who has created a file and later (with versioning) would help to understand who changed a file.

Describe the solution you'd like A simple log, where I can view anything related to actions in papermerge.

At this point I can only confirm that this feature is planned. I cannot tell you the exact release which it will be part of, but it will be definitely there. At this point, there is only "UI Logs" - which is a very primitive implementation of Auditing. In future, a full fledged Auditing feature will replace UI Logs.
