Update project to account for lack of availability of smaller screens

The old AliExpress links are dead - some people have shared 3 inch and 5 inch displays. We'll need to update the docs/links and eventually the case STL files.

I've purchased this from AliExpress, not connected yet but it appears to the the correct size and chipset

@chrisys yes, the display looks to be exactly the one you had written the instructions for. I had to move the zero-ohm resister and solder the connections exactly as per your instructions. The only thing to bear in mind is that mine came with header pins attached
