Symlink subdirectories under test/roles/provision_docker

As of ansible-core 2.15.5, symlink targets cannot consist exclusively of ".." and the name of the parent directory: https://github.com/ansible/ansible/pull/81785

Let's fix that by symlinking the required subdirectories individually.
