Added steps for instrumentation and code coverage reporting for our e2e cypress testing

Why did you make the changes?

As requested in ticket

Did you run tests?

I was able to see some and get test coverage reports, but usually I got the following errors:

Could not find any coverage information in your application by looking at the window coverage object. Did you forget to instrument your application?
