[schema] Update stackoverflow.csv

This commit updates the fields of the stackoverflow schema and updates the schema to the latest format by adding aggregatable and description columns to the fields.

I cloned grimoirelab repository, used docker-compose and changed the default-grimoirelab-settings/setup.cfg. Used the discover of kibiter to see the fields of the documents.

Hey, @sduenas I did micro.py --raw --enrich --backends stackexchange and checked with kibiter index-patterns. I actually forgot to commit some changes like author_gender and author_gender_acc. I also arranged them alphabetically.
