[Feature Request] Custom shortcuts

Overview Description: It would be great to be able to customize the keyboard shortcuts, and even set some to None (no shortcuts). With the former, I'm especially interested in customizing seeking shortcuts. The latter is good for things you're sure you don't want to ever change and want to avoid hitting by mistake, like brightness and contrast adjustments.

There's no GUI for this yet, but you can already customize shortcuts using a config file (Preferences > Config Files). mpv's manual has more info.
