Bars update for Data API v2

Alpaca Data API v1 was officially deprecated Sept 26, 2021.

The updates in this PR are solely meant to address Bars in Alpaca Data API v2, as there are additional API endpoints available (Trades, Quotes, Snapshot, etc).

Note that Bars does not support multiple tickers in v2.
