Update documented versions of Vocabulary Family projects used in downstream projects in `README.md` file

Description

  • The README.me file now has the individual files listed for each downstream project that mentions a dependency upon any project in the Vocabulary family.
  • Tables have been added outlining which versions of each Vocabulary family project is currently in active use, and by which project--versions that were set to a range have been calculated to the precise version that is currently in use for more clarify.
