Add the documentation on the GMM-based estimator

The GMM-based estimator is not documented properly:

• [ ] Add GMMs to the list of estimators.
• [ ] Add documentation on GMMs.
• [ ] Update the version of the package to 0.2.0.
• [ ] Use poetry to submit a new version of the package to PyPI.
