ci: add job to run tests using Kotlin 2

What?

Kotlin 2.0.0 was released a few hours ago:

https://github.com/JetBrains/kotlin/releases/tag/v2.0.0

Since there are now two major versions, it would be useful to run tests against both. This PR adds a new Maven profile and a CI step to activate it.
