I think there is preference to use carpentries-es can we rename this repo?

I think instead of renaming it, we merge it with https://github.com/Carpentries-ES. Something like this could work?

I discussed this with @maneesha, and her preference is to wait to merge...

I'm also in favor of renaming, but I'm not sure how easy it will be to find all the links pointing here...

Rayna and I talked yesterday about the option of re-organizing somethings given the work the Spanish speaking community is doing as well as the internationalization efforts of The Carpentries in general. This is why I wanted to hold off on moving things around right away. I'm not sure it makes sense to have distinct GitHub organizations for different language or global communities. There may be ways to set this up within The Carpentries GitHub organization - I will need to look into this more. Suggestions are welcome!
