I see you have a docker compose here: https://github.com/Peppermint-Lab/peppermint/blob/master/docker-compose.yml
So it should be a fairly simple thing to do! Let me know if you have any questions.
What do you mean by that? If the docker compose changes? If so, you'll have to update the one click app definition.
That's why we do not allow latest tag, instead, we always keep the versions as specific as possible.
This will make sure that if a new environment variable is required for a new version the current installation definition won't break.
