Update papermerge.yml

This is my first ever pull request, si I hope I've done right.

I was looking to install Papermerge on caprover but just seen that the source pointed on the one-click app install is outdated. Therefore I've made minimal change (source + version).

Replacement of existing old dockerhub source by official source
