camunda-docs Rename cluster load files

As a follow-up to https://github.com/camunda/camunda-docs/pull/5239, we should rename the docusaurus pages and add redirects as required from capacity to load after a month or so, once the name is definitively settled as load > capacity.

@akeller that makes sense, didn't realise about doing that - I'll do that in a separate PR, as I want to wait on this PR and see if the name settles down before I start adding redirects, but meta would be fine - thanks! 🚀
