Intelligent document processing review

The IDP documentation did not receive a review from the Technical Writing team before publishing in the March alpha, so it would be advantageous to have a retro review, ideally before the 8.7 release in April 2025.

FYI @christinaausley @conceptualshark docs are still undergoing changes, I'll give you a heads up when they are 'final' and ready for a review (without wasting your time on moving docs) - thank you!

This review may need to happen after 8.7, but the docs are in a good place (they are usable).
