Camunda Platform Helm Chart 10.0.0 not compatible with Zeebe < 8.5.0

Description

With the addition of the REST API port and the split between management and application servers, the newest version of the Helm chart is not compatible with Zeebe versions older than 8.5.0.

This should be documented in the upgrade path.

Note: I would also add a label for the component as the distribution Helm chart, but I couldn't find an existing one.

I added the Self-Managed label, as that roughly corresponds to the Distribution and Infex teams. Thanks for the prompt to consider new and more granular labels 🤔
