In Optimize 7, add 7.22 to the engine compatibility test

Acceptance Criteria (Required on creation)

• To test Camunda 7.22, we need to add it to our engine compatibility tests that run nightly. This involves:
  • Add the new version to the matrix here.
  • Adding a new 7.22 profile in the pom.
• Consider bringing back to test snapshot to catch issues early on. Similar to link.

Hints

• The change was attempted in https://github.com/camunda/camunda-optimize/pull/14380 but it turned out it is not straight forward. Since:
  • 7.22 tomcat 10 and jakarta,
  • 7.20, 7.21 works with Tomcat 9 and javax
