Updated docker-compose.yml to use the latest Cal.com version v5.0.19.

I'm not sure this PR makes sense. The initial intention of of the image specified in docker-compose.yaml seemed to be to use the latest tag and not a specific tag.

I assume you @shubhthakre have observed outdated versions being used with the latest tag? In that case, I'd guess the scarf.sh gateway was lagging behind or you simply already had an older version of the latest tag locally.
