[CAL-5927] [Atoms] - Allow `selectedDate` prop to select even if time-slot is unavailable

Currently, setting selectedDate only selects the date only if there's an available time-slot. We'd like to change this behavior so the Booker always reflects the provided selectedDate, even if the time-slots aren't currently available.

This is useful for scenarios like showing a previously reserved time-slot. helping users confirm or review their existing selection.
