Added convert workflow to strip SAML signature

👋 Thanks a lot for your contribution. Since this PR was opened, the project structure for workflows has changed quite a bit, and we’re doing some cleanup to keep it up to date. I’m going to close this one for now, feel free to reopen or submit a new PR if you’d like to revisit the idea
