Fix caddytest's ensureConfigRunning

Can we fix the way we compare the adapted config so it "just works"™?

The use of reflect.DeepEqual doesn't really work here. This just makes the use of caddytest not as useful as it could be. I'm either thinking of forking caddy or figuring out another way to write integration tests.
